Taco Flatbread

  • 2 rectangle naan flatbread, store bought

  • 1/2 cup sour cream

  • 1 tsp chili powder

  • 1 tsp garlic powder

  • 1 tsp cumin

  • 1 pound lean ground beef

  • taco seasoning packet

  • 2 cups frozen corn

  • 2 jalapenos, deseeded and diced

  • 1/4 red onion, diced

  • cheddar cheese, shredded

  • cotija cheese, crumbled

  • diced tomatoes

  • green onions, sliced

Cook beef and add taco seasoning, set aside

In same skillet, add olive oil and frozen corn, jalapenos, red onion until soft.

In small bowl mix sour cream and spices.

Toast naan on broil in oven, flip and repeat

To assemble, Spread sour cream mixture over both flatbreads.

Next layer is beef, then corn salsa, then tomatoes.

Add shredded cheddar, crumbled cotija cheese, and green onions
