Quinoa Tex-Mex Salad with Chili Lime Dressing

  • 1 package frozen corn

  • 1 small white onion, diced

  • 1/2 cup (before cooked) quinoa, follow package directions

  • 1/2 can black beans, rinsed

  • baby tomatoes, halved

  • cilantro, chopped

  • avocados, chunked

  • mixed greens, handful

Dressing

  • juice of 1 big lime

  • 1 tsp chili powder

  • 1 tsp cumin

  • 1 tsp paprika

  • 1 tsp minced garlic

  • 1 tbsp agave or honey

  • 3/4 cup olive oil

Saute corn and onion until brown marks appear on corn. Set aside.

Make quinoa according to package directions. Set aside.

Put all dressing ingredients into mason jar and shake.

Chop salad ingredients.

Mix all salad ingredients in large bowl, omitting mixed greens. Pour some dressing over and mix well.

Place in fridge if serving cold.

Once ready to eat add mixed greens and more dressing to taste. Salt and pepper to taste as well.
