Chicken Caesar Flatbread

  • 2 pre-made flatbread

  • 1 stock romaine and 2 handfuls of mixed greens

  • baby tomatoes, sliced

  • fresh parmesan wedge, peeled

  • 1 grilled chicken breasts

  • 1/4 cup caesar dressing, divided

  • croutons, crushed

  • 1/2 lemon, juiced

  • salt and pepper

  • drizzle olive oil

Preheat grill. While preheating, butterfly chicken and season with lemon juice and salt and pepper.

Grill chicken 5-7 minutes per side. Let rest.

Drizzle flatbread with olive oil on both sides. Grill until crunchy.

While chicken is cooking, finely chop romaine and mixed greens. Dice tomato, and slice parmesan.

Drizzle with dressing and, salt and pepper, mix well.

Smear remaining dressing on warm flatbread. Top with salad mixture, and chicken.

Top with crushed croutons, parmesan cheese, and a drizzle of olive oil and black pepper.
