Taco Meatball Bowls

  • 1 lb 80/20 beef

  • 1 lb sausage

  • 1/4 cup bread crumbs

  • 1/4 cup crushed Nacho Cheese Doritos

  • 4 tbsp taco seasoning

  • 1 egg

  • 2 big cans red enchilada sauce

  • bell peppers, sliced

  • red onion, sliced

  • avocado

  • cilantro, diced

  • spanish rice, I used quick store bought rice and made it according to package directions

  • romaine, chopped

  • limes

  • tomato

Mix beef, sausage, crushed Doritos, taco seasoning, and egg in large bowl. Mix until just combined.

Roll into large meatballs. Place them on a parchment lined cookie sheet.

Flash freeze meatballs for 1 hour or overnight.

Place frozen meatballs into crockpot with 2 cans enchilada sauce.

Cook on low until tender, usually 8 hours.

Slice peppers and onions and saute in skillet until tender.

Make spanish rice as package directs.

Chop romaine, cilantro, tomato, and avocado. Slice limes.

Pile everything into bowls and drizzle with enchilada sauce from crockpot.
