Mexican Cilantro Lime Salad

  • 2 romaine hearts, chopped

  • 1/2 bag cole slaw mix

  • 1 can black beans, rinsed and drained

  • 1 cup corn

  • cherry tomatoes

  • 1/4 cup pepitas

  • 1/4 cup shredded cheddar

  • 1/4 cup chopped cilantro

  • 2 green onions, sliced

  • cotija cheese, crumbled

    Dressing

  • 3 tbsp mayo

  • 1/4 cup cilantro

  • 1 tbsp minced garlic

  • juice and zest of 1 lime

  • 1 ranch packet

  • 1/2 cup to 3/4 cup buttermilk

Put all dressing ingredients into food processor.

Blend until creamy.

Add more buttermilk or cilantro to get the right consistancy you desire.

Layer all salad ingredients on plater.

Toss with dressing.

Top salad with cotija cheese.
