Peach Fireball Cake

  • 3 peaches with skin

  • 1 tsp cinnamon

  • 1/4 cup water

  • 1/2 sugar

  • 3 tbsp fireball

  • 1 1/2 cup flour

  • 1 cup sugar

  • 1 tsp salt

  • 1 tsp nutmeg

  • 1 tbsp vanilla

  • 1/2 cup buttermilk

  • 2 tbsp brown sugar

  • 2 eggs

Butter and flour 9 inch round pan.

Sprinkle sliced peaches with cinnamon and brown sugar line bottom of prepared pan with peaches.

Set aside.

Prepare cake mixture, add all dry ingredients and stir.

Add buttermilk and eggs, mix until just mixed, do not over mix.

Add 1/4 cup water and 1/2 cup sugar to saucepan on medium heat.

Let it boil for 15 minutes without stirring.

Add Fireball off the heat and stir and pour over peaches.

Pour batter over peaches.

Bake at 375 for 40-50 minutes until done in the center.

Let sit 10 minutes before serving.

Flip pan upside down on serving plate.

Serve warm.
