Hawaiian Grilled Salad with Pineapple Vinaigrette

  • 1 cup jasmine rice

  • 1 1/2 cup coconut milk

  • 3 crushed pineapple and juice

  • fresh pineapple

  • fresh mango or dried

  • 1/2 cup coconut, toasted

  • 2 peppers, sliced

  • red onion, sliced

  • mixed greens

  • cilantro, chopped

  • 3 green onions, sliced

  • macadamia nuts, chopped

  • 1/4 cup white wine vinegar

  • 1/4 cup olive oil

  • 1 tsp sugar

  • 1/2 tsp sesame oil

Make rice with coconut milk instead of water. Add 3 tablespoons crushed pineapple and 3 tbsp juice.

Cook as directed.

Add 1/2 chopped cilantro to rice

Meanwhile, Grill the onions, peppers, and pineapple.

Put 1 tbsp crushed pineapple and 3 tbsp juice, 1/2 tsp sesame oil, 1/4 cup white wine vinegar, 1/2 tsp garlic powder, 1 tsp sugar, 1/4 cup olive oil, salt and pepper in a small mason jar. Shake

Layer mixed greens, coconut rice, veggies, pineapple, mango, toasted coconut, cilantro, green onions, and macadamia nuts.

Toss with dressing
