Butterscotch Cashew Cookies

  • 2 sticks salted butter, softened

  • 3/4 cup brown sugar

  • 3/4 cup sugar

  • 1 tbsp vanilla

  • 2 eggs

  • 2 1/4 cup flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 cup butterscotch chips

  • 1 cup roasted cashews. chopped

  • sea salt

  • 1 cup chocolate chips

  • 1 tbsp coconut oil

Preheat oven to 375.

Cream butter and sugars well

Add vanilla

Add one egg at a time, beating well after each

In separate bowl, mix flour, baking soda, and salt

Add flour mixture to dough

Stir until just combined

Stir in butterscotch and cashews

Bake for 10 minutes

Cool on wire rack

Once cooled, melt chocolate chips and coconut oil in 30 second intervals until creamy

Frost each cookie with chocolate and top with a few butterscotch chips, cashews, and sea salt
