Taco Burgers with Sweet Corn Salsa

Burgers

• 4 brioche buns, or buns of your choice

• 80/20 ground beef 1 pound

• 4 slices of cheddar cheese

• 1 red onion, sliced 

• 1/2 packet taco seasoning  *see note*

• 4-5 dashes of Worcestershire sauce

• fresh jalapeños 

• salt and pepper 

Sweet Corn Salsa

• 3 ripe avocados, smashed

• 3 limes, juiced

• handful of cilantro, chopped

•1 bag frozen corn

• 1/2 packet taco seasoning, divided *see note*

• 4 green onions, diced

• 1 package cotija cheese, crumbled

• 1 can diced rotel tomatoes with green chilies, drained

• salt and pepper

• 1 tbsp. sugar

Place ground beef in medium size bowl.

Add Worcestershire sauce salt, pepper and taco seasoning. Mix, don’t over mix.

Divide meat into 4 equal parts. Form into patties. Set aside.

Slice red onion into slices. You will grill them this way.

Now to make the salsa. In saucepan on high heat setting, drizzle with olive oil.

Add diced red onion and frozen corn. Sauté until almost charred. Turn down heat to medium.

Add taco seasoning, sugar, salt, pepper, and tomatoes. Remove from heat. Place in the fridge to cool.

Meanwhile, slice and smash avocados in small bowl. Add juice of one lime. (Or more to your liking)

Add about 2 tbsp chopped cilantro, and salt and paper to taste.

Grill your burgers to your liking. Add cheddar cheese.

Add remaining cilantro, cotija cheese, and green onions to corn salsa.

Once burgers are cooked, place them on bottom bun.

Top with guacamole, corn salsa, and fresh jalapeños.

*note*

You can make your own taco seasoning with out as much sodium as the packets at the store. I prefer making my own. I always have these spices in my cupboard. 

• 4 tbsp. chili powder 

• 4 tbsp. cumin

• 2 tbsp. garlic powder 

• salt and pepper 

The Sweet Corn Salsa is great to bring with a bag of tortilla chips to a party! Trust me....you will leave with a lot of new friends!😉
