Spicy Spinach and Cheddar Breakfast Strata

• 6 eggs and 6 egg whites

• 1 cup heavy cream

• 1/2 bag of fresh spinach, sautéed

• 1 tbsp minced garlic

• red pepper flakes

• 1/2 loaf of Italian baguette, chunked

• 1 orange pepper, or any color you prefer 

• 1 white onion, diced

• 1 lb. Italian hot sausage

• 1 tbsp dried basil

• 1 tbsp onion powder

•1 cup shredded cheddar, divided

• 1 cup shredded mozzarella, divided

• salt and pepper to taste

Sauté spinach with olive oil.

Once wilted add garlic and red pepper flakes.

Remove from pan and sauté peppers, onions, and sausage.

Spray glass 9 x 13” pan with cooking spray.

Line bottom of pan with chunked bread, sausage mixture, and spinach.

In medium bowl, whisk eggs and egg whites.

Add cream, basil, onion powder, 1/2 cup cheddar and 1/2 cup mozzarella.

Pour over bread mixture. Top with remaining cheeses.

Cover with foil. Bake at 375 for 15 minutes.

Remove foil and cook until no longer jiggly, about 15 minutes.

Let sit 10 minutes before cutting and serving.

You can make this ahead the night before. If you make it the day of, the bread pieces will be a but crunchier. Personal preference.
