Pulled Pork Chili

  • 2 to 3 lb pork roast

  • 4 tbsp chili powder, divided

  • 4 tbsp cumin, divided

  • 32 oz beef broth

  • 3 cans roasted diced tomatoes

  • 1/2 white onion, diced

  • 2 cans chili beans in chili sauce

  • 2 cans kidney beans, drained

  • 1 1/2 cup spicy V8 tomato juice

  • 2 tbsp minced garlic, divided

  • 1 can green chilies

  • salt and pepper

Season pork with 2 tbsp cumin, 2 tbsp chili powder, 2 tbsp minced garlic, and salt and pepper.

Place pork in slow cooker with beef broth. Cover and cook on low for 8-10 hours or until shreddable.

if using instant pot, pressure cook for 3 hours. Release and shred.

Once pork is shredded, add the remaining ingredients to a large pot on stovetop on medium heat. Heat

through. Turn heat down to simmer and simmer for 1 hour. Top with fresh jalapenos, white onion, cheddar

cheese, sour cream, or green onions. Enjoy!
