Pomegranate Steak Salad

Salad

  • 2 steaks of your choice, I used Filet Mignon

  • mixed greens

  • 1/4 red onion, thinly sliced

  • blue cheese crumbles

  • pomegranate seeds

  • 10 asparagus

  • small broccoli head

  • avocado

Candied nuts

  • 1/4 cup brown sugar

  • 1/2 tsp cayenne pepper

  • 1 tsp cinnamon

  • 1 tsp salt

  • 1 egg white

  • 1 tsp vanilla extract

Dressing

  • 1 tbsp mayo or greek yogurt

  • 1/4 cup pomegranate juice

  • 1/4 cup balsamic vinegar

  • 1 tsp sugar or agave

  • 1 tsp onion powder

  • 1 tsp steak seasoning

  • salt and pepper

Preheat oven to 300

Add egg white and vanilla to bowl, mix

Add seasonings to another bowl

Add nuts to egg mixture, stir well

Add seasonings to nuts

Pour onto parchment lined cookie sheet

Bake for 20 minutes

Stir

Bake for another 20 minutes

Let cool

Preheat oven to 400

Place asparagus and broccoli on cookie sheet

Season with olive oil, lemon pepper and garlic powder

Bake for 15 minutes

Season steak with salt and pepper

Add steak to grill

Grill to your liking

Add all dressing ingredients into mason jar and shake

Assemble salad by layering ingredients

Enjoy!
