Green Chili Taco Soup

  • 1 1/2 lbs beef

  • 1 white onion, diced

  • 4 tbsp taco seasoning

  • 2 cans green chilis

  • 2 cans rotel tomatoes

  • 2 cans mexican corn

  • 2 cans green chili Enchilada sauce

  • 2 cans black beans, drained and rinsed

  • 2 cans pinto beans, drained and rinsed

  • 32 oz vegetable broth

  • 1 tbsp cumin

  • 1 can refried beans

  • 1 jalapeno, thinly sliced

  • 1 cup shredded cheddar cheese

  • cilantro, chopped

  • green onions, diced

  • sour cream

Brown beef in big stock pot. Add onion and cook until soft.

Season with taco seasoning, salt, pepper and cumin.

Add all canned ingredients, besides refried beans. Stir.

Add vegetable broth.

Bring to slight boil then reduce to simmer. Cover and simmer for 30 minutes.

Add refried beans and stir until smooth.

Add cheese right before serving.

Add taco toppings of your choice.
