Farro Salad with Maple Orange Dressing

  • 3 (8.5 oz) bags farro, cooked as directed on package, and cool

  • 3 celery stocks, diced

  • 1 small sweet potato, roasted and diced

  • 1 cup craisins

  • 1 small apple, diced

  • 1/4 cup orange juice

  • 1 tbsp minced garlic

  • 1/4 cup olive oil

  • 1/4 cup maple syrup

  • 1 tbsp lemon pepper

  • 1 tbsp sugar

  • 1 tbsp dijon mustard

  • 3-4 handfuls of mixed greens

Roast diced sweet potato at 375 with a drizzle of olive oil until tender.

Cook farro as directed on package and let cool.

In the meantime, dice celery and apple. and assemble dressing.

Add orange juice, garlic, olive oil, maple syrup, lemon pepper, sugar, and dijon mustard to mason jar.

Cover and shake to mix.

Add farro, apple, sweet potato, celery, craisins, and half of the dressing to large bowl. Mix.

Refrigerate until cold.

When ready to serve, add mixed greens and remaining dressing. Stir.
