Vegetarian Lettuce Wraps

  • head of cauliflower, chopped small

  • head of lettuce

  • 3 red, orange, or yellow peppers, diced

  • 2 big carrots, diced

  • 3 celery, diced

  • 3/4 cup soy sauce

  • 1/4 cup hoisin

  • 2 tbsp minced garlic

  • 1 tbsp brown sugar

  • 2 tbsp chili garlic paste

  • 2 tbsp sesame oil

  • handful of cashews, chopped

  • 3 green onion, chopped

  • 2 tbsp corn starch + 1/4 cup water + stir = slurry

  • siriacha sauce, optional

Heat big skillet over medium high heat with sesame oil.

Add cauliflower, peppers, carrots, and celery.

Cook covered until soft. Meanwhile, make sauce.

Add soy sauce, hoisin, garlic, sugar, and garlic paste to small mixing bowl.

Once veggies are soft, and sauce.

Make slurry and add to skillet. Bring to a slow boil.

Turn off heat and continue to stir until sauce thickens

Add more slurry if still too runny.

Fill lettuce bowls with filling.

Top with cashews, green onions, and siriacha.
