Cranberry Bars

• 1 pkg fresh cranberries

• 2 tbsp amaretto liqueur

• 1/2 cup grape jelly (or any fruit jelly you have)

• 4 slices of orange rind

• 2 tbsp red wine

• 1 cup orange juice

• 4 tbsp sugar and 1 cup, divided

• 2 tbsp balsamic vinegar

• 1 cinnamon stick

• 2 cup flour

• 2 tsp baking powder

• 1/2 tsp salt

• 3/4 cup butter, softened

• 1 egg, beaten

In a large saucepan add cranberries, amaretto liqueur, jelly, orange juice, orange rind, red wine, 4 tbsp sugar, balsamic vinegar, and cinnamon stick.

Cook on med /low until cranberries start to pop and it starts to thicken. Cool completely.

Take out rind and cinnamon stick. You can refrigerate this up to 7 days prior to making bars.

In large bowl, mix 1 cup sugar, flour, baking powder, and salt. Cut in butter until crumbly texture.

Add egg and mix. Pour half of mixture in bottom of 9 X 13 inch baking pan. Pour cranberry sauce over crust.

Top with remaining mixture. Bake at 350 for 40-50 minutes until lightly golden. Cool completely.
