Chocolate Dipped Peanut Butter Cookies

  • 1 cup salted butter, softened

  • 1 1/4 cup sugar

  • 1 1/4 cup brown sugar

  • 2 tbsp vanilla extract

  • 3 eggs

  • 2 1/2 cups flour

  • 1/2 tsp baking soda

  • 1/4 tsp salt

  • 1/4 cup chocolate chips

  • 1/4 cup peanut butter chips

  • 1/2 cup peanuts + 1/4 cup

  • chocolate almond bark

  • 1 3/4 cup creamy peanut butter

Preheat oven to 325.

Add butter and sugar to bowl. Beat until creamy and well blended.

Add vanilla.

Add eggs one at a time, beating well after each addition.

Add peanut butter. Beat.

In separate bowl, add flour. baking soda, and salt.

Add flour mixture to peanut butter mixture.

Do not over beat! Beat until just combined. Over beating will make the cookies hard.

Stir in chips and 1/4 cup peanuts.

Roll dough into balls and roll in sugar.

Use a fork to make the signature imprint.

Bake for 15 minutes.

Let cool.

Once cool, Place about 5-7 cubes of almond bark in microwaveable bowl.

Microwave 1 minute at a time until smooth.

Drizzle, dip, or frost cookies and sprinkle with remaining chopped peanuts.

Let the chocolate dry.
