Vegetable Noodle Stir Fry

Ingredients

• Linguine noodles (4 servings)

• 4 celery rods, coarsely diced

• Pea pods

• 2 peppers (I used yellow and orange)

• 1 zucchini, coarsely diced

• 1 carrot, coarsely diced

• Peanuts

• Sriracha (to desired taste)

Sauce

• 1 cup soy sauce

• I cup water

• 2 tsp. brown sugar 

• 1 tsp. dejon mustard

• 2 tbsp. rice vinegar

• 2 tbsp. chili garlic paste (add more if you like spicy)

• Cornstarch slurry (2 tbsp. cornstarch mixed with water until cornstarch is smooth)

• 1 tsp. red pepper flakes 

 

Directions

Make noodles according to package directions.

Sauté vegetables in olive oil until tender.

While you veggies are cooking, make the sauce.

Add all ingredients, except slurry, and mix well.

Turn on the heat to high.

Add slurry to pan.

Stir until sauce is thickened.

Pour vegetable mixture over noodles and top with sriracha, green onions, and peanuts.
