Tequila Verde Pork Tacos

  • pork roast

  • 1/2 cup tequila

  • 1 can (7 oz) green chilis

  • 1 jar (16 oz) salsa verde

  • 3 tbsp taco seasoning

  • 4 limes

  • pico de gallo - i used store bought

  • fresh jalapenos

  • 4 smashed avocados

  • cilantro, diced

  • sour cream

  • white cheddar, shredded

  • corn tortillas, toasted

Rub taco seasoning on pork roast.

Place roast into crock pot or instant pot. pour green chilis and salsa verde over top of roast.

Squeeze juice of 2 limes on roast, place lime rind into the crock pot.

Cook on low for 10-12 hours or until tender and shreddable.

If using instant pot set it to meat/stew setting. Set and forget.

In the meantime, smash your avocados in a bowl.

Squeeze juice of 2 limes into avocado smash. Add 2 tbsp cilantro. Season with salt and pepper. Set aside.

To toast your tortillas, heat a small skillet dry. Place tortilla in skillet and flip until toasted. set aside.

Assemble the tacos with remaining ingredients. Enjoy!
