Sweet Potato and Bean Baked Tacos

Ingredients

• 1 lb. ground beef

• 1 sweet potato, peeled 

• 1 can black beans, drained and rinsed 

• 1 white or yellow onion

• 1 can rotel tomatoes

• cheddar cheese, shredded

• 1 tbsp. Cumin

• 1 tbsp. Chili powder

• 1 tsp. Garlic powder

• salt and pepper

• avocado

• cotija cheese, crumbled

• baby tomato

• taco sauce

• hard shell and soft tortillas (small)

 

Directions

Heat oven to 375.

Dice sweet potato and onion and place on oiled cookie sheet.

Bake until tender.

In a high sided pan, sauté beef.

Add sweet potato, onion, rotel tomatoes, and black beans.

Add seasonings. Mix until seasonings are evenly coated.

Take a soft tortilla and a small amount of shredded cheese.

Microwave for 20 seconds so the cheese is somewhat melted, wrap tortilla around hard shell.

Fill with sweet potato filling.

Top with diced baby tomatoes and avocado.

Line tightly into 8in square pan.

Once the pan is full of tacos, top with cotija cheese.

Bake until melty.

Drizzle with taco sauce
