Lemon Coconut Glazed Cookies

  • 2 sticks salted butter, softened

  • 3/4 cup brown sugar

  • 3/4 cup sugar

  • 1 tbsp coconut extract

  • 1 tsp lemon extract

  • 2 eggs

  • 2 1/4 cup flour

  • 1 tsp baking soda

  • 1 tsp salt

  • 1 1/2 cups toasted coconut, divided

  • 1 lemon, zested and juiced

  • 3/4 cup powdered sugar

Cream butter and sugar until smooth. About 5 minutes.

Add extracts and 1 cup toasted coconut.

Mix flour, baking soda, and salt in separate bowl.

Add eggs, one at at time and mix well between additions.

Add flour mixture until just combined. Dont overmix!

Take cookie scoop and place on cookie sheet.

Bake at 375 degrees for 9-12 minutes.

Let cool.

In small bowl, mix powdered sugar, 2 tbsp lemon juice and zest of lemon.

Mix until smooth and runny. add more lemon juice or water until you get desired glaze consistency.

Drizzle over cooled cookies and sprinkle with remaining toasted coconut.
