Apple Butter Pork with Apple Slaw

  • 3 lb pork roast

  • 1/4 apple cider vinegar

  • 3 tbsp stone ground mustard

  • 3 heaping tbsp minced garlic

  • 3 cup apple cider

  • 1 onion, diced

  • 1 apple, diced

  • 2 tsp red pepper flakes

Apple Slaw

  • 1 package coleslaw cabbage

  • 1 apple, diced

  • 4 tbsp sour cream

  • 3 tbsp apple cider

  • 1 tbsp apple cider vinegar

  • salt and pepper

Place pork in crockpot or instant pot with all ingredients.

Cook on low for 10 hours or until shreddable.

If using instant pot, set on meat setting for 3 1/2 hours.

To make slaw, add cabbage and apple to bowl.

Mix all other ingredients in small bowl and stir.

Mix with apple and cabbage.

Keep in fridge until ready to eat. Stir every so often.

Stack generously over your pulled pork.
